Weekend Breakfast: Belgian Waffle

2 cups cake flour
2 tsp baking powder
1/4 tsp salt
4 eggs, separated
2 tbsp sugar
2 cups milk
5 tbsp unsalted butter, melted
1 tsp vanilla extract
Sliced fresh strawberries or banana
Sugar powder for garnish

1. In a bowl, sift together flour, sugar, baking powder, and salt.
2. In another bowl, beat together the egg yolks and sugar until the eggs have turned a pale yellow. Add butter, milk and vanilla extract to the eggs and whisk.
3. Stir into dry ingredients just until combined.
4. Preheat the waffle iron.
5. In a different bowl, beat the egg whites until soft peaks form. Fold the egg whites into the batter (Be careful not to overmix).
6. Pour the batter in the iron to just cover waffle grid. Bake until golden brown.
7. Sprinkle with sugar powder and serve with sliced fruits.
