Perfect Corn Bread with Cheddar Cheese, Pimientos, and Slab Bacon

You're impossibly hungry. You'd eat anything in your fridge. It's rounding 10 PM, and if you knew where your children were, you'd probably eat them, too. Unfortunately, you have little more than a few condiments and deli meats in your fridge. We've all been there. Don't wave your white flag of surrender just yet. We'll show you how to make that cornbread you meant to make when you bought that box of cornmeal so long ago. More importantly, we'll show you how to make it a gosh darn meal in-and-of itself.

Best of all, it's gluten-free. It'd be vegan if you didn't add the slab bacon and cheese. But we recommend that you do for this dish.

1. Mix stuff together

Preheat the oven to 400 degrees.

Chop up some slab bacon until you have a cup of it in nice, little bite-sized cubes. It's that really cheap stuff they have at some supermarkets that tastes great. If you can't find any, any cured ham will do in a pinch.

Drain a jar of pimientos and chop them up as well. Put them in the same bowl together. To that bowl, add one cup of unsweetened coconut milk, one tablespoon of white or rice vinegar, two tablespoons of coconut oil, and one 11-ounce can of creamed corn. Mix.

Let me take a break for a second to talk about the inclusion of this much-maligned, alien-like canned confectionary. You probably have a surplus of it for reasons even you can't explain. Its sweetness is just perfect for this dish, and its consistency will give your bread a moistness that lets you get around using too much butter. It's a perfect ingredient, but if you're really worried, just substitute some applesauce for it.

In another bowl, add two cups of cornmeal, two tablespoons of baking powder, two teaspoons of salt, 1/2 teaspoon of baking soda. That's your dry bowl.

2. Combine, top, and bake.

Pour the wet bowl into dry bowl and mix until just combined. Put it in a greased 8x8 dish or cast-iron skillet and sprinkle with shredded cheddar cheese. Bake for 30 minutes, or until a toothpick stuck into the center comes out clean.
