Baked Apples with Cinnamon Red-Hot Candies

I know it's summer, but as long as it's mild and we can justify turning our ovens on, let's do so. This is my variation on a baked apples recipe that I stumbled across some time ago. The most genius part of it is where it gets most of its flavor from: cinnamon red hot candies that melt to perfection, in the oven, into the apples. If that doesn't get your mouth watering, we don't know what will.

1. Choose your apple.

Ask what baking apples are fresh at the supermarket. If your grocer shrugs, just grab six granny smith apples. Core them, but do not peel them.

2. Choose your red hots.

We like any kind, especially Mike's Red Hots. Just don't use Tic-Tacs or gum. Not that you would, but one person I gave this recipe to told me she did.

3. Stuff your apples.

Preheat the oven to 360 degrees.

In a bowl, mix 1/4 tsp nutmeg, 1/2 tsp ground cinnamon, 1/2 tsp cinnamon bitters, 3/4 cup of packed brown sugar, 1/2 cup of good maple syrup, 1/3 cup of raisins, 1/3 cup of cinnamon red hot candy. Spoon the mixture into the cores of the apple.

Bake for 30 minutes if the apples are on the small side or closer to 40 minutes if they're on the larger side.
