Vegan Meatloaf Recipe

I know, I know: nothing says summer like turning on your oven to cook this vegan meatloaf recipe, and that's why we're paying special attention to something that would taste great even if you eat it cold. I'm inspired by a Filipino take on meatloaf that's brought to your table ice cold and reminds me of a cooked tartare. So that's what we're doing here: making a nice, cold tartare that's guilt-free. Those of you who live in omnivorous houses can especially take note: this is the kind of vegan dish that's so good, you're safe to serve it to carnivores.

1. Cook some veggies.

Over low heat, cook four finely chopped cloves of garlic, a half of an onion finely chopped, and one stalk of celery finely chopped in olive oil. Remove after about ten minutes.

2. Shape your loaf.

Preheat the oven to 350 degrees. Rinse a can of chickpeas and mash them together with your hands. To it, add the cooked veggies, orange zest, lemon zest, two chopped carrots, dried basil/oregano/sage, a half-cup of panko breadcrumbs of saltines, a half-cup of vital wheat gluten, a fourth-cup of water.

3. Bake.

Throw it in the oven for twenty minutes. Then turn it over and cook it another ten minutes.

Serve and enjoy, or put it in the fridge for a day and serve it with a squeeze of lime juice over it!
