This is incredibly exciting news for everyone who loves good food: Eater received word today that Maison Kayser, a terrifically famous Parisian bakery known for its killer baguettes, tarts, and quiches, will be opening shop in New York City for the first time ever.

According to the bakery's website, Eric Kayser, the breadbox's restaurateur, espouses a deep respect of "small-scale bakery tradition using natural leaven" throughout the development "of his creations throughout the years." When it comes to what makes his bakery stand out, Kayser points to the "technical innovations, new recipes, innovative store designs, and a constant search for the best quality ingredients." But more metaphysically than that, Mr. Kayser puts much stress on "the values that are dear to him: a love for work well done, and team spirit."

When it comes to baking, he claims that good bread is the ultimate litmus test. It "doesn't lie: [well-made bread] says everything about the quality of its ingredients and the know-how of its creators...that's my passion, and I want to share it and introduce it to other craftsmen both in France and around the world." Though his entrepreneurial jet-setting has garnered him the nickname of "the ambassador of French bread to the world," this will be his first, and possibly flagship, location in the United States.

Fortunately for all of us, his next stop is New York City, where Mr. Kayser has signed the lease at 1294 Third Ave. An employee at the shop reported to Eater that the bakery should be open to the public in approximately two weeks!

We at FoodNRecipe aren't afraid to admit that we're most excited to try the pain voyeur, a baguette stuffed with salty sardines. Our mouths are watering!
