But since we're probably going to stop just short of that, all you need is a wok filled with oil, a cooking thermometer, potatoes, salt, and pepper.

Uncle Moe's Birthday Fries
Grab four large russet potatoes, peel them, and cut them into whatever shape you want your fries. If you like thicker fries, cut your potatoes thicker. If you want thinner fries, go ahead and cut your potatoes thinner. You get the idea.
Rinse them in a bowl under cold running water until the water out of them starts to run clear. Cover them with water by an inch, then cover that with ice. Refrigerate for two hours.
Fill a wok with peanut oil and heat over medium-low heat until a deep fry thermometer registers 325 degrees F.
Drain the ice water from the fries and pat them dry. Fry for 6 to 8 minutes, or until they start to turn a sort of blondish color. Take them out, and let them rest for thirty minutes.
When you're ready to bring them to the table, reheat the oil to 350 degrees. Fry the pre-fried fries for an extra minute. Transfer them to a paper lined platter and sprinkle them with salt, pepper, and Old Bay. Serve immediately.
